What is the best tires for drifting/racing in a 2000 Ford Mustang?
First, aqs the goals of drifting (going slowly, albeit with style) and racing (going fast) are completely different, the most appropriate tires for each will be quite different.
For drifting, the key issue would be predictable grip. A basic performance tire would probably be fine, though I wouldn't expect it to enjoy any particular advantage over a harder, longer lasting tire.
As for racing, I can be much more specific here as I have a lot of familarity in this area... the key issue here will be what kind of racing and what class you are competing in: For production or modified classes in SCCA or NASA, or anything similar where you can use slicks, you will run the classic choice between Hoosier and Goodyear. Both are good, though the specific best will depend on your car setup and the tracks you run and the overall ambient temperature (as well as the specific compound of either one that you use most often).
Going a step down, the Hoosier R6 will be the fastest tire, but it is also a tire that requries more precision on the part of the driver... so for many, Kuhmo V710, Avon, BFG R1, or Pilot Sport Cups can offer similar performance (and in areas where longevity and/or time to get up to temp matters, some of the others may be better choices). A step further down will bring around the Toyo RA1 (and the new 888 seems to be a little faster, though a little less versitle), with Yoko's and Kuhmo's other choices being well above street rubber, but short of the rest (though the Kuhmo V700 compound heats up better than the Toyo, making it a better choice for certain applications).
After that, you will be back down into street rubber... the Bridgestone RE01r stands out as one that can offer near R Compound performance, but this and a few others will still be well under any of the R Comps or slicks. And while probably unavailable to most, the absolute BEST at the moment are probably the Michelin slicks - though this are available only by lease (quotes I've heard are about $20k/race weekend, but include engineering support)... likewise, similar pro level leases from most major manufacturers are available, and will represent the top level of possible performance now available.
There are simialr offerings for Drag specific tires, with a few DOT legal application specific being available (BFG probably being best known here), and full on drag slicks being a better choice (though not drivable on the street).
